This Amontiliado gives explosive aromas of salts and almonds with the upfront freshness of a fino before the earthier flavours take charge. The palate mirrors the nose but with more finesse and elegance. El Maestro Sierra became the first and is still one of the few bodegas run entirely by women. Being fierce protectors of tradition, they are also one of the last bodegas still working entirely by hand; she moves the wine without electricity and the use of pumps. This provides the perfect amount of aeration which in turn adds complexity to the sherry. This Amontillado is aged for 12 years in the solera system. Filtering is minimal to non-existent (done manually with a sieve to simply keep out large particles from the bottle) and no SO2 is added to the wine. El Maestro Sierra Amontillado should be served at European room temperature (65°F).
