Dopff au Moulin - Crémant d"Alsace Cuvée Julien Brut NV is very pale gold with clear reflections and fine columns of bubbles. Fresh and elegant, with a discreet hint of flowers and dried fruits. A generous note on the palate. All the finesse of Pinot Blanc and the body of Auxerrois optimized by the traditional method. The cuvée is patiently rested for 24 months "on latte" for greater complexity and finesse of bubbles.
Dopff au Moulin has roots dating back to the 17th century, when Jean-Daniel Dopff established the "Deer" Tavern in the town of Riquewihr, Alsace. Located at an altitude of 300 metres, the city is nestled beneath the Vosges foothills, sheltered from the North winds and West rainfalls. The exceptional soil quality, its southern exposure and a distinctive micro-climate over the upper parts of Riquewihr are responsible for a wide range of grapes and for the blooming of almond trees among the vineyards.
The family have resided in the region for hundreds of years, passing on the secrets of the divine alchemy that subtly brings terroir and grape variety together from one generation to the next. In 1900, Julien Dopff, a pioneer in the service of Alsatian viticulture discovered the "Champagne Method" and decided to apply the method that worked so well in Champagne to Alsace wines, inventing Crémant d"Alsace!
