Throughout his winemaking life, Rafael Palacios has exclusively worked with Godello. The grape has a structure reminiscent of Gruner Veltiner with a yield potential comparable to Chardonnay. Unlike Chardonnay, Godello produces a low quantity of malic acidity so never benefits from Malolactic fermentation like is common with premium chardonnay. The result is that Godello carries a much lower total pH which goes a long way to balancing out the fleshier nature of the grape and driving the sense of place with exhilarating minerality. As Sortes is sourced higher up the slope where the granitic soil is purer and unweathered. This North facing site produces 25,000 bottles from 45 year old vines. The result is an etheral and pure expression of soft herbs, citrus pith and tropical nectar. Uber mineral and precise with a long lasting finish showing off lees contact and granitic begininngs.
