Grapes are de-stemmed and left to begin fermentation as whole berries. This is followed by normal delestage. (Delestage is a two-step rack and return procedure in which fermenting juice is separated from solids by racking. It is then returned to the fermenting vat to re-soak the solids). Often cited as the red burgundy from a white wine vineyard, this shows a soft chalkiness that you feel you can almost scoop into! Like the Monthelie the attraction here is the ample and forward red fruit basket. Concentration is piercing and there is a nip of chalky acidity on the finish to keep it honest. 2025to 2030
