Product: 2021 Clos des Cazaux, Gigondas, Tour Sarazzine
From vineyards of 30 to 50-year-old vines, Clos de Cazaux"s La Tour Sarrazine 2021 is a classic Southern Rhône blend of Grenache (70%), Syrah (15%), and Mourvèdre (15%). A beautifully intense garnet colour in the glass, the nose reveals notes of liquorice, preserved red fruits, and white pepper. The palate is round and generous with flavours of Mediterranean herbs. Aged only in stainless steel and concrete vats to preserve the purity of the fruit. The families of Vache and Archimbaud have been growing vines in the Vacqueyras area for 300 years. Gabriel Archimbaud participated in the process of the creation of the Côtes du Rhône appellation, and named his own Domaine Clos des Cazaux. His granddaughter married Maurice Vache, her two sons Jean-Michel and Frédéric Vache run the domain today and are the 5th generation of vignerons. The brothers are meticulous, obsessively so, their hands-on approach to vine-growing and wine-making is resulting in impeccably pure, bright, soulful Southern Rhône wines. These are some of the most consistently exciting, and underrated, wines in the Southern Rhône. Food Pairing: Lovely with ceps and pumpkin, truffle, roast beef, and wild boar ragu.
