Product: 2021 Clos Canon, Saint-Emilion Grand Cru
A fine example of how good a second wine can be, the Croix Canon 2021 is made using grapes from an 11-hectare plot, bordering esteemed Château Canon. Whilst Merlot is the majority grape, a larger proportion of Cabernet Franc (35%) was used for this vintage due to mildew wiping out a good percentage of the Merlot. The result is a fabulously characterful wine with well-integrated texture and harmonious aromas of blueberry pie, mulberries, five spice and fallen leaves. With black and blue fruits on the palace, this is deep and spicy whilst retaining a juicy freshness. Bright, poised, and utterly delicious. The wines of Croix Canon are crafted from an 11-hectare plot surrounding the 12th century Mazerat Chapel. Viticulture intensified in Saint-Emilion during the Middle Ages as a result of its location on the Camino de Santiago pilgrimage route, and many churches and monasteries were built here from the 11th century onwards – Croix Canon is a reminder of the regions deeply religious past. The chapel was completely renovated in 2012 and now houses a fermentation room and modern cellar beneath a two-hundred-year-old oak roof. In the vineyard, vines are planted to 70% Merlot and 30% Cabernet Franc, on a gently sloping hillside causing moderate water stress for the vines. The average vine age here is 35 years. Crafted with the same expertise as Château Canon Premier Grand Cru Classé, the wines of Croix Canon offer exceptional value. Food pairing: Beef cheeks in red wine, slow cooked short rib, wild boar sausages, porcini mushroom pasta, hard cheeses and charcuterie. or dark fruit compote desserts.
