Taaibosch is the name of a farm located on the steep slopes of the Heldeberg (a mountain range 50 km southeast of Cape Town, overlooking False Bay). Between 1995 and 2005 the farm produced a single wine; the country's first Cabernet Franc dominated Cape Bordeaux-blend. After 2006, the vineyards continued to be sufficiently well cared for, but the grapes were offered to other wineries. In 2017 the farm was bought and Schalk-Willem Joubert stepped in as cellarmaster. I met Schaalk last October and we discussed how he crafts his single wine Crescendo. In truth, Schalk wishes he could make a pure Cabernet Franc, but the farm's terroir cannot deliver that. Cabernet Sauvignon is planted in the lower reaches of the farm, at around 245 metres. Merlot nestles on the middle reaches of the estate while Cab Franc is found at the higher points.
